Hi from Texas, and I think the other suggestions are all great ones! If you search and find some patterns you like, I would go that way...if not, then I would definitely cut out some general shapes, ones that you know you will use at some point...Have fun with it!

It depends on how well and how quickly you currently can cut fabric by hand. If you are pretty accurate, I would bypass the strip cutters and go for a quilt that is difficult to cut by had, such as winding ways or drunkard's path. If you do a lot of appliqué, then cutting shapes, such as flowers etc. may be a good choice.
you need to see what dies they have available before your session. They may have a list. When you have made your decision, precut your fabric into appropriate size pieces at home. Folks on this board can help with the sizes. If you are going to cut appliques consider ironing on fusible before you cut. One hour isn't a long time, so preparation will maximize your time!

Congrats and welcome from Kansas! I would cut shapes prefused with double faced fusible for machine applique. These in my opinion take the most time to mark and cut by hand. Enjoy your hour, I love my go cutter and find it to be a real time saver.

2 1/2 " strips or 2 1/2" squares or strips and/or squares the size of your choice. I love Drunkards Path so if you like that pattern it would sure be easy to cut on the AccuQuilt. I have the Go Baby and love it, my BFF has the Go and when I needs strips I go to her house.
