How about a 'plain spoken' quilt

It looks pretty easy, and if you don't like the idea of matching up seams from row to row you can scatter the seams like in this 'salt water taffy quilt'

I love this site. you can find all sort of free patterns to try. ask your neice which one she likes out of a couple that you think that you can do. I have done only the hunters star but am working on my third one. I love this site there are three others that I am thinking about trying also.
