    I would definitely talk to her first and find out what kind of pattern she would prefer. It's going up on the wall in her house! What if you didn't ask and she didn't really like what you made and hung it out of obligation? I'd rather know it was something she wanted.

    I am a MIL to know one, yet, but I would wear the phrase with pride if I was considered 'kinda odd' I would think my child had married well!

    (you got a lot of good ideas, I agree with the person who commented that COLOR is what is going to stand out)

    Try a landscape quilt with a southwest theme. They are fun to do.

    I'm not sure how it would come across to anyone from her post that she "was not an accomplished quilter". It seems to me she is very accomplished to even contemplate such an ambitious plan! You don't say how much time you have but I would say make whatever pattern is pleasing to you and hopefully you have a MIL who will cherish it because it was from you and made with love.
