I made a large ironing board and that helps. Before that I used a 5' long folding table that I covered with an old quilt which I pinned to itself underneath to keep it in place. However, it was still a chore.

Set your ironing board up against your biggest bed. Let the ironed quilt parts fold over onto the bed. Better yet, if you have a king-size bed, put the quilt on the bed and iron it while it's on the bed. Start in the middle and work out on all sides. I've ironed on the bed lots of times.
