    Try making a quilt as you go block, using interfacing. That may work and solve the streching problem if you do a little denser quilting. If a block or two doesn't work you will know without wasting a lot of time or fabric.

    I make/donate small quilts for Crisis Nursery. Some of the knits may work, but I'd never use on a large quilt.

    Double knit fabric make wonderful braided rugs, or it also make wonderful picnic blankets.
