I do the same..........collect those 2.5 strips for scrappy log cabins or framed squares or 4 patches.

I roll left over bindings onto empty wax paper rolls, toilet paper rolls, xmas wrapping rolls, etc., and store them in a zippered plastic bag that a blanket came in. Easy to see what is stored and use on oven mitt covers, pot holders which I give to friends and hostess's for dinner parties, we are invited to.

You can save the binding and then when you have another quilt that needs binding you can do a scappy border. I have done many scappy borders and they really look cool.
If you didn't cut them on the bias then you can cut the strips into rectangles or squares and use them in your next block or use them as a really thin border or piping.

i have a special bag for all my left over binding...beings i use 2 1/2 inch binding, i iron it flat, then have a scrappy 'jelly roll' to work with!!
