    I have made a few quilts with fleece on the back, and the method surprised me by being easier to handle than a regular 3 layer quilt. So this would fit into your need for speed. They're warm and drape nicely, and the quilting looks nice front and back. To speed things up even more, you could start with a panel in the center. There are quite a few designs on the market with natural or rustic themes that look masculine. A pieced border of your own design would add a nice handmade element. He will love having something you made especially for him for these frequent trying ordeals.

    If you are going to go with precuts you should look at MSQC on YouTube. So many great quilts, that are usually quick and easy and nearly all use precuts. Like the others suggested, use flannel or anther cuddly fabric on the back. Good luck and I'm looking forward to seeing what you come up with!
