I have made 3/4" finished final border. This is one of a series I did. You can skip the border, but that may not be the affect you want.

For my mom's floral quilt, I did a 1.5" green border and then a 4 or 5 inch blue border because it's her favorite color. The blue also complimented all the floral fabric in the quilt. If I were do remake that quilt, I probably would have done just the 1 border, in the green, but at 3 or 3.5 inches. She loved the quilt so all is good.

This is beautiful! I would use a stop border of 1 inch and then the binding either in the same color or a contrasting color depending on your blocks.

I've done a border that finished at only 1/2"! I had a quilt that I wanted to be borderless, but I didn't want my binding to hide any bit of the blocks, so I put on a teeny tiny border sized just right to be "eaten" by my binding.
I'd say lay it out with differing amounts of fabric showing around the edges and take pictures. Somehow it's easier for me to "see" things like that in photos. Compare and decide what looks best to you!
