Have 3 shoe boxes full of triangles from previous projects.
Any easy suggestions: Pinwheels, Half-squares with white or
natural muslin as opposite? Help .... need something simple
to take a break from my current projects which are very
    intricate.

There are all kinds of stars with hundreds of different names that you can make with half square triangles--hundreds more if you cut them in half and make quarter square triangles. Some of my favorites are Barbara Fritchie Star, Pinwheel Star, Friendship or 9 patch Star, Ohio Star, etc.

Check out http://www.quiltville.com for ideas. She has all kinds of scrappy patterns.
