Need help for quilt idea

How about doing it as an adult I Spy??
... look for all sorts of prints that are symbolic of what she loves and what she wants for her future. You could even print some photos on some of the blocks to add to the interest in the quilt.
It'll be the hit of the dorm when she heads off to Univerity ... and something for her to cuddle in when she misses home, her friends ..... and her animals!

Pam Bono has a pattern for a quilt with a Western saddle on it. Title is "Saddle's" #7769. Her web site is pambonodesigns.com. Now, if she rides strictly English, this may not be her "thing". I ride English and I am still making the Western Saddle quilt!
I have lots of horse (and chicken) related material that I have collected for my stash. The Alexander Henry Fabrics Collection "charras" has a nice Western panel. I have coordinating fabrics to quilt around the outside and border.I have other horse panels by Giordano Studios,LLC.. Wild Wings by Persis Clayton Weirs @ Springs creative Products Group, LLC has panels also. They have a lariet print Cp31611. This one matches the above panel of the Alexander Henry fabrics. I know horse shoe patterns, brands, spurs, etc exist. I have collected them all. These were fat quarters with no label on them. I look for a quilt block that have pieces that I can fussy cut the horses on. Have fun! Hope this helps!

This pattern could be adjusted a little to make it more adult looking, I think it is the cutest pattern for animals.

I made my granddaughter an animal quilt. I used the log cabin pattern. I fussy cut the center with animals and then surrounded it with logs in matching colors and she loved it. She still has it on her bed even thou she is a teenager now.

Margaret Rolfe has some animal blocks that are very nice. They are paper pieced. You could probably enlarge them on a copier if you don't want to make them 4". I enjoyed doing them but you do need to like doing paper piecing.
