How about a panel quilt? I usually take the center panel, batting and back and quilt it. Then I add 10 to 12 inches of material, top, batting and back on each side, then do the same on top and bottom of the quilt. Quilt and add binding. I can do this in one day as long as I have all the materials (fabric, spray glue, batting) for the quilt, and you end up with about 60 x 70 depending on the size of the panel. This is also a great way for kids quilts, Cinderella, animals etc.

I just did a 12 inch block using flying geese units and it went together in a jiffy. It is a four patch star and the pattern is on Craftsy for free. You can use charm packs, only other cutting is a 6.5 x 2.5 rectangle. It was super easy, the seams line up beautifully and the end result is very pretty. You could make as many blocks as you need with sashing between.

Warm Wishes is a quilt that goes together quickly. My "go-to" quick quilt is to cut 2 1/2" strips, 4 of one color, 5 of another, put together into a 9 -patch, then alternate with a 6 1/2" square of a focus fabric, put together in rows 5, 5 rows across, 7 down, add a 6 1/2" border of the focus fabric and you're done. The top can easily be made in a day, and it's a perfect baby quilt or lap quilt.

Ally, you didn't mention what size exactly. Whenever I need a really fast quilt, I find a nice print ( 1 1/2 yes) and use that. If you want it a bit bigger, put a border on it.

Jeanne S., I love, love your quilt. I certainly will try this one. Questions: how many strips (approximately) did you use? what size is your quilt?

I just watched this tutorial for the first time. It's a really nice block, but those twisted seams made me nervous. That is one thing that always stresses me out on blocks with many seams. Which way to press?

GailG, each rectangle block finishes out at 6" x 10". I made this quilt 10 blocks across and 7 down, so it will be 60" wide and 70" long, twin or large throw size. I used 5 fabrics: about 4 yards or 60 WOF strips. Today I just pieced another one but it is smaller, 8 blocks across and 6 down for a finished size of 48" x 60", throw size. This one has 48 blocks and took about 40 WOF strips. You will find it a simple one to do!
