I'm sorry. I know you want to use what you have, but I honestly don't think the grey packs a punch. The strips are terrific but the whole thing seems kind of bland. I really think the red would be smashing and then maybe do a thin black border and then a red one.

I understand what some are saying that gray does not pack a punch and the gray does not pack a punch, but all the other fabrics provide the punch and the gray calms while pulling it all together. Thus you have just the right amount of punch. I might also like white, but still think I like the gray better. I don't like the red as a background, just too loud for me. Most important this is your project so go for what you like. These are all opinions including my own opinion.

I was also thinking that red piping would look remarkable and still use the gray background fabric!

I like the subtlety of it. I suppose the choice depends on whether you want subtle and sophisticated or punchy and funky. I love the curves by the way - I'd like to try something like this myself. Where did you get the pattern , or did you make it up yourself?

I think in MHO that I would be inclined to add just the odd red stripe to the black and white stripes and then have a red border. I think the way you have curved your pieces is just fabulous and makes for a real one-off quilt. Well done you! Please post the end result.
