Your fabric selection is super. I have part of my jar pieces cut out, so I'm started.

I have also been collecting for one of those quilts, but I want to do baskets instead of jars. Seems to me vegetables & fruits would look better in baskets like at a farmers market. I'm just waiting to find a pattern for the baskets or I'll just use the the basket fabric as sashing around each produce square. Would really love to find a cute pattern first though.

There are lots of nice patterns online. Here are a couple I found: http://quilting.about.com/od/blockof...wer_basket.htm (this one sounds like what you were talking about), http://www.paperpanache.com/free/tuopen.htm

I see a lot of food fabric in Hancock fabric, I could not figure out for the life of me what to do with it. They had it marked down to $2.50 per yard at one time.

How cool! Just today I visited my Amish neighbor to see the canning quilt she was making. She had already made three and was piecing the fourth. It was really different. I had no idea that they were so popular. Wait til I tell her it was discussed on the computer.
