I will assume you want one that is hip length and hangs straight? I googled "quilted vest pattern" and many idea's from Etsy came up with patterns offered there. Haven't looked at a regular pattern book (McCalls, Butterick, Vogue) in years, but sometimes their easy to sew patterns are offered at places like Walmart and JoAnns. You might find one there.

I have bought many children's patterns that way, but do be aware you will have to print out many pages and tape them all together to get your pattern.

I have a couple of vests that I like. Neither are of stretchy material. I could make a pattern from the vest I have by laying them out on newspaper and trace around the vest. I would probably lay the vest in a linear fashion on the newspaper, so that I could start with the center front and roll the vest around until I had drawn out the whole vest all the way without any side seams. You will still have shoulder seams but you could use binding seam on those to finish them on the inside. fyi,,,I am a little bit on the boxy side these days. I don't need darts or anything like that so this method would work for me. But if you want other choices:

Create TV (part of PBS) has a show called Quilting Arts. One of the episodes featured a lady who makes jackets out of quilts. You may be able to find the episode online and get some tips and tricks on how to do this. Good luck!

RedGarnet222, I was thinking along the same line. Get a cotton shirt that you like that fits well--make a pattern from that on paper. You could even get a secondhand shirt and cut it apart to use as your pattern. Even buying a used item would be a lot cheaper than buying a legit pattern.
