2-1/4 is what I usually cut.

On my black hunters star quilt which is king size, I cut the binding 3 1/2" wide, folded in half then stitched on at 1/2" making my binding 1/2" wide and it looked great. A perfect size for a large quilt.

I use 2 1/4.. It works best for me.

2.25 is perfect for me but that is because I do the hand quilting to the back. Most quilter's I know that do the binding totally on machine use 2.5" binding.

I use the two and 1/2 die on my go for all my binding. Easy to cut, once folded makes a nice width of binding.

2 1/2 for me. Seems to work ok. Have used narrower bindings on small things.

I generally cut 2 1/2" but it depends on the thickness of the batting. I have used 2 1/4 " with thin batting like Quilter's Dream Request. Often I make a sample first. I sew on top, hand stitch back. I do not enter mine in shows so it doesn't bother me that much if there is more on the back than front. If making stitching line on front wider than 1/4", you would need to take into account if you will be cutting off any points, e.g. With pieced border. I made one wider binding and did not like it immediately after doing it and still don't.

I do the same as Misty's Mom for big quilts....I use 2.5 inch on small quilts, 3 inch on medium quilts and 3.5 inch on really large quilts. I do this because I think the wider bindings look better on larger quilts for a more balance look. I use 3/8 seam (the width of my walking foot with needed moved) for the 2.5 and 3 inch binding) and generous 1/2 seam on the 3.5 binding. I think they look great.
