What about making a baby quilt using the super sized nine patch. It is very fast and easy to make.

I've had good luck with tablerunner and matching napkins in charity silent auctions. They are quicker, easier, and a little less taste-dependent than a lap or bed-size quilt. If you use holiday fabrics, that may broaden the appeal even more.

The fastest thing I know is taking a panel or a pretty yard of fabric and add borders until you have the size you want and then quilt it up, sew on binding and wallah, done!

what about one of those long oven mitts you use with both hands?--they're useful & EZ to make...

Have a panel so check that will get used, pincushions great idea, My next question would be how many placemats or napkins would you make to go along with the tablerunner. I'm only asking cause we have 6 in our family and most are only sold in stores in a 4 pkg so do you make 4 or more?

Why not make two sets of 4? If someone needs more than 4 they can bid high to be sure they get all 8. I had 7 in my family and sets of 4 of anything was useless to me.
