"when I grow up, I want to quilt like Jinny Beyer"

That it looks like it's usable and will hold together.

I think that is "none of the above" -

Color is what first grabs my attention, but for me the sum of a quilt is much greater than its parts...it's the overall feeling of the quilt.

1&3. Anything that is hand-appliqued just catches my eye first. If its a pieced quilt, then color does.

A great looking pattern will catch my eye.

OK I think all of these things are important, but what stands out for me does it all work together. I just don't care for when one aspect of the quilt is fighting another (over the top fabric with over the top quilting -- each great on their own but not together) or just doesn't make sense (a simple Sponge Bob panel quilt with intricate feathers).

But given your list of criteria, this is order I would put things in:

1. Color selection and coordination
2. If it is lump free
3. If it is SQUARED up
4. TYPE of pattern (strip piecing, applique or paper piece)
5. Complicated pattern.
5. The intricacy of the finished quilting

The last two are really a toss up for me.
