I made one last spring that has a narrow strip stitched over the seams. The pattern intended for you to buy the new super large ric-rac, and braid two together for each seam. Too costly.

i did blocks with backing larger and sewed the blocks together along the smaller top fabric with batting beneath, then folded the backing over the front of the blocks and blanket stitched down.

You can use the fold and flip method. You start in the middle of your quilt and place the first strip face up. Then place the next strip face down on the first, lined up, and sew through all the layers with your 1/4" seam. Then fold the top stip over and press. Put your next strip face down on it, and do another seam through all the layers again. Fold it over and press. Keep going until you're finished that side.
Then switch the quilt over and start in the middle again and work out to the other side.
When all your vertical strips are on, then just run a few horizontal lines of stitching through the layers and add your binding.
Voila, no sashing.

I'll be doing a qayg at some point and was wondering the same thing. I was thinking I would fold back the backing and batting, and sew the top with a quarter inch seam, then lay the batting and backing flat and over lapping, fold under one side of the over lapped backing, and press, then top stitch over that. There will be a seam in the back, a seam where you'd normally find one on the front, but no sashing. It works in my head... :lol:
