I've asked RaNae whether she's ok with me posting her email replies to my questions here in case it helps anyone else decide, and she says yes. So here goes; the green text is hers.
Re foundation piecing technique:
"The classes focus primarily on the spirals themselves, but I do also teach techniques for paper piecing that make it much easier than traditional methods. I work via email and blog to give you answers to your questions and feedback on your work. I have not had a student yet that couldn't learn to do the paper piecing involved in the spirals, so I think you will likely be able to learn too. The best class for you would be the Spirals Crash Course -- the next one begins in April.

Re timeframe:
"...yes, I do have to stick within the 4-week time period for the class, as I have a new class each month and it is too much work to teach two classes at the same time. However, you are welcome to print out the class materials and your dialogue page to refer to on your own after the class period has ended."
"I should add that if you are taking both the Spirals Crash Course and the Combining Spirals Course (people often do them back-to-back) it does provide a bit of "overflow" time."
