I have a king sized bed. I take the covers, sheets off of it. Lay out my backing. Put down the batting. Have the quilt top rolled up, and DH and I start on one side to unroll it slowly. If it does not line up properly, just adjust. The quilt top is not yet completly unrolled. Sometimes we pin some. We use pinmoors now, so it goes faster

If it was a full can of spray and you used it almost up, then is it possible you used too much to begin with? Sometimes more is not better. I've never used bamboo batting, so I have nothing to offer up about that.

That really is sad and you have my sympathy. It always seems when you have a deadline that anything and everything will go wrong. Save your bamboo batting for other projects like hand quilting, mug rugs, table runners etc. and try with your regular brand of batting and adhesive. I have never tried the spray adhesive so I can't offer any advice except what I've read here...some adhesives don't like polyester or starch? I myself like to use Hobbs 80/20 fusible batt and someone mentioned another brand... Warm Bond by Warm and Natural that sticks to the fabric?
