When I use them, I sew them onto a piece of muslin. My selvages are "fatter" then normal because I like to see a little of the fabric too. I sew them with a straight stitch really close to the edge of the selvage.

I collect selvage strips too and have made some cute things over the years. As Doggramma said, sew them onto a muslin base then you can do pretty much anything you like!

I always cut my selvages off at 1.5" so that some of the fabric shows. I save them up in bags and then sew them together when the bag is overflowing, ending up with 6" squares. You could also use a muslin foundation to sew them diagonally to squares. In any case, use just as you would any other squares. It's fun. There are a couple of books available with ideas.
