You can keep the clutter look down by painting the cubicles white. You are so lucky! I wish I had that big of a room. Have done some decorating in the past so just wanted to pass along that tip. If you keep some color coordinating desks, shelves etc. (spray cans of paint). It won't look as bad while you're "tearin it up" working on a wonderful new quilt.
:) I hate that guilty feeling when people see my mess - so the uniform colors (black/white etc)makes it more pleasing to you and the people that pass through. And in the L/R-D/R everyone is going to see Everything.
Have fun That is going to be awesome!

Thanks, I actually got the idea from LQS I used to live near. They used the plastic ones with metal conference tables in the classroom.

I was excited to find the wooden ones. They are actually more stable and almost match the table. My DH attached them upside down with screws. They added about 4" to the height of the table and are actually made to be stacked if you needed even more height. I also salvaged the top from my old broken JoAnns cutting table and placed it under the mat after removing all the hardware and duct-taping it together. All together it is almost 34" tall and I am 5'3".

No, I bought them at a thrift store and they appear to be from a retail shop. The two of them cost less than $100.
