I have used sheets many, many times for my charity quilts and only had problems one time. It was when the fabric was really nice--very, very densely woven (and a very nice hand--it was so smooth) and I did have problems with my Janome 7700 skipping stitches. All the other times, no problems!

Very pretty quilt! I've only been quilting about 9 months and 4 of my quilts have flat bed sheets for backing. Three were new sheets, bought on sale for $7.50 (queen size). One was made out of a set of my mothers sheets. They had been washed a few times but still in great condition. This one is on my bed and washed frequently (two Pomeranian and a cat think they own the bed!) It looks great. The top sheet was used as the back and the fitted used through out the top. Whenever I can find nice sheets at the thrift store or new on sale, I buy them! Oh and I quilt on my domestic machine- no issues thus far.
