I can't help you regarding the separating stabilizer issue, but I use an applique pressing sheet when ironing over the sticky t-shirts. I set my iron a little lower and just do a quick pass over the shirt with the pressing sheet on top. Quilting through the sticky letters is murder, so I try to avoid them and just quilt around, if possible. I hope this helps!
