I piece with light or dark gray, and as long as my tension is correct, I never see it on the quilt. I imagine tans would work equally well. In a pinch in the middle of the night, I would try anything I have if I ran out of gray and beige!

I run my partial bobbins down by putting them on the spool and threading them through the needle.
This is especially useful when I have a partial bobbin left from quilting a quilt on my HQ16. I do try to use light threads for lighter fabrics, dark thread for darker fabrics if possible.

I use mostly white and off white, but like others, I have a lot of colored thread I'm starting to try to use up. But I do use up my colored bobbins on scrappy quilts.
I use white when I have white sashing or white fabrics. And I do use black on black and red on red fabrics.
