WOW, It sounds like we have ALL been in your shoes, I know I have. when I have an off day I just sit and sew blocks or strips, it's what I call mindless sewing....I have a collection of these and they will go into a scrap quilt, I just find that it keeps you in touch with your machine . One of my downfalls was being afraid of my machine, always afraid I would do something wrong, I am the same way with my computer! but it all gets easier with practise and patience, Keep on keeping on!

You'll know your a quilter when you've given your seam ripper a name. Mine's name is Jack. I reverse engineer a lot of blocks. Finding the "sweet spot" where you have an accurate 1/4 inch seam helps a lot and many of us use a 1/4 inch bladed foot. I find that pressing helps a lot.

Many shops have a class or meeting every month or so and you take your unfinished project. The people there will help you out with the problem and you have fun in the mean time.
