You are right as you have 2 threads on top and 1 bobbin.

Some use it to sew on the smaller bias strips when doing Celtic work as an example. I made a "futuristic" Christmas tree wall hanging (pattern from Sewing with Nancy a number of years ago) and used the fusable metallic bias tape which I then stitched down.

I don't have them or have used them. I did see them used for how to attach bias tape to a stained glass quilt and they said the disadvantage of the twin needles is they don't handle curves too well.

I have a girlfriend that quilted with them, it was amazing! I thought I had a picture but am unable to locate it, so will see if I can get a hold of her and get a picture. She does mostly free motion and used varigated threads. She has also used a twin needle when doing a celtic quilt and putting the thin black strip down.

I used it to sew the black bias tape on a quilted stained glass pillow.

I've never used mine for anything but decorative topstitching. But recently I saw an all-black table runner done using the twin needle for FMQ. She used variegated thread in both needles and it gave it a twisted ribbon effect. It was beautiful!

Yes, because there is only one bobbin thread coming up. The double needle makes a great decorative stitch. It's really nice for top stitching or outlining. Put your DN on and practice some of your decoratives stitches. This may give you ideas.
