I like silk thread. It's expensive, but a spool lasts a long time. I buy neutral colors that blend in with just about everything I applique.
If you can get it, 60 weight cotton is also very nice to use.

I like silk as well. It doesn't seem to knot as much as as cotton. I also use a polyester called So Fine once in a while. Both make the applique stitches almost invisible. There is also a very fine (100 wt) cotton new to the market called Invisifil that I am going to try.

You can find Invisafil 100 wt. Thread at SoftExpressions.com. It comes in a wide variety of colors and can be purchased in a six color pack. I have used the off-white on red, blue, green and other color fabrics and it is so fine that you cannot see the stitches. It runs rings around silk thread and it is very strong and does not break like silk and cotton can. Try it, you'll like it.
