I depends on whether I will use the back a lot. For reversible placemats, I use the same variegated thread in the bobbin. For quilts that will really only be seen from the front, I use a blending bobbin thread.

I just quilted a quilt today with verigated thread and I used a solid color for the back. I usually use a solid for the back if it's a print and a verigated on the back if the fabric is solid. Also depends on how much verigated thread I have.

Never even occurred to me until just now that variegated in top & bobbin will almost never match up so there's no need to use the same thread in both. Obviously, that means that I've only used the same variegated in top & bobbin. So far it's turned out nicely. I'm about to quilt another quilt with Bari variegated by Aurifil. Guess I'll have to pay more attention to how it turns out.

My only caution would be to be sure you use the same "weight" of thread in the bobbin. Different weights can cause some machines to skip stitches and act up in other ways....for that reason i always just use the variegated in top and bottom.
