Hmmmm, glad to know this has a name (French fold.) This has always seemed the best way to me because you have a binding that is truly two thicknesses. But, if you use a binding maker tool, when you fold it over you might not have a "real" double fold right on the edge of your quilt. (Does that make any sense at all? Maybe somebody will know what I'm talking about!) Never used a tool, I've always just cut the 2.5" strips and folded them over and stitched & flipped over, whether bias cut or not.
Single fold and double fold are both only one layer of fabric thick. Single or double refers to one or two edges folded to the center. French fold is the binding that's folded in half and both raw edges are sewn to the quilt edge making it two layers thick on the edge of the quilt.
