What would you do?

I wouldn't expect her to take back the fabric once it's been washed, but I would tell her about the error so that perhaps she will be more careful next time. I would use some fabric from the front of the quilt to piece a bit of a design into the back, and in the future I would not rely on that LQS owner to do any calculations for me.

buyer beware ... she was giving you suggestions but ultimately it is your decision on how much to buy ... I ask for help but always buy what I think I need and usually end up with leftovers ... buy more material and finish your lovely quilt and consider it a lesson learned!

If the mistake is pointed out any reasonable person would replace the length. She can still sell the other piece that you originally bought, even if she needs to cut into it again. Give it a go and see what she says.
