I use Better Homes & Gardnes American PAtchwork & Quilting. The latest version still includes the history of every aspect of quilting, choosing fabric. color, materials, maintanecne of everything. I have the hard back books that go as far back as 1985.

I have had a few people start with 'Quilting for people who Don't Have Time to Quilt' byMarti Michel. Published by American School of Needlework. I am pretty sure it is no longer in print. The Alex Anderson books are good with easy projects. Academy Books are awesome and full of information, but are a bit more pricey.

Believe it or not, I think that the Singer beginning quilting book is great for beginners. I have tons of books and just sorted through them and thought more people should have this book for beginners.

For me it was Alec Anderson's book on learning to sew. She goes from picking out the fabric to binding the quilt.

"Quilting for the First Time" by Donna Kooler is a great book. Explains things clearly and there are a number of projects that cover quite a few different techniques. Goes from "what you need to get started" through to more complex things like sashings/bindings.

Maybe a printed list of resources/websites could be handy for your students.

They are excellent for explaining things and have several quilts in each book that a beginner/novie can make.

I'm also a fan of Eleanore Burn's books and videos for beginners. She gives great instructions.

The first block that I made was the Ohio Star and I can remember how proud I was of that block. I think I love the block simply because it was the first one that I made and it looked great. :-)

Another good book is Fon's and Porter's "Quilter's Complete Guide". My edition is one of the first editions and I noticed that they now have a new (different) cover on the book but I imagine that the information inside the book is the same.
I also used the Fon's and Porter "Quilter's Complete Guide" and found it very helpful and easy to read and understand.
