    I cook 1/3 of a head (for 2 of us) unil tender (a covered pan w/a little water so it is mostly steamed). I have one of those little blenders called a magic bullet, it can hold up to 1/4 of a head at a time if you want to do half the head. Anyway after it is cooked I put about a tablespoon of butter, some salt and pepper and 1/2 of the 1/3 (or 1/2) head that is cooked, blend until smooth. That is a serving for 1 then do the same w/ the other rest It is quick and easy and tastes / looks like whipped potatoes.

    I've never mashed cauliflower but I'll give it a try. DH has a magic bullet he uses frequently. I think I'll try it for this. Thanks for the recipe. (I'll add garlic!).

    Any blender will work, but the trick is that you are making basically "whipped" mashed potatoes not "chunky" mashed potatoes, if the cauliflower is left chunky it will ruin the illusion. Also don't add extra milk like you do for potatoes. The first time I tried it I left the cauliflower chunky since I like home mashed potatoes w/ the little bit of "chunks", I hated it w/ the cauliflower and didn't try again for quite some time thinking these people were crazy if they thought it was like mashed potatoes but when it is blended to the point of being "whipped" or chunk free it is amazing.

    I have unsuccessfully been looking for cauliflower wraps. Did find some low carb wraps, I added a little cheese, chopped chicken and picco. It tasted pretty good. I have used the frozen riced cauliflower and been happy with it

    Woo hoo for Wednesday, Later shipping day!

    All packages are in and sorted and I have a date with our postal carrier on Wednesday, barring any complications with printing labels. You'll probably get your tracking numbers sometime tomorrow. Be on the lookout by early evening.

    Default Boom Biz - shipping date issue

    Remember what I said about problems printing labels? Well...

    USPS online shipping isn't working correctly and hasn't been for a couple of days. I'm ready to print but they all show today's shipping date and will not update despite repeated attempts. Since I don't know what tomorrow will bring, (complete failure???) I'm going to print the labels as they are. Your emails from USPS will show a shipping date of today but they will not be mailed until tomorrow. I'll probably just drop them at the PO tomorrow morning on the way to an appointment nearby.

    Be on the lookout for your tracking numbers shortly but they will go out tomorrow, not today!

    Thank you Janice for all your work and dedication to this Boom! I've really enjoyed it and give your leadership and hard work a lot of the credit for its success. I'm so excited to see all my blocks!!
