I've been away from home for 6 days and have just read 15 pages to catch up, and my secret santee has received her package and on the birthday of my dad (he would have been 101) I do so hope she likes whats in it. Maybe the postie will bring me a package soon?

roseirish48 11-12-2014 03:57 PM

Patchesnposies 11-12-2014 03:57 PM

Packages are all sent and boy, is that a relief! I am so excited (and happy to have them on their way), I so hope my swap partners like what they get. I keep second guessing myself. I can see where swaps like this could be addicting!

Cindy60545 11-12-2014 04:25 PM

Oh goodness! Have I been tardy on the thread! Look at all those pretties that have been made! Since I've not received my package yet, I guess they're all for me! Yippee!! My Santaee has received her package, but haven't seen them on the thread. Hope she likes everything.
Got a recipe that my family loves!

CHOCOLATE BROWNIE COOKIES

6 squares Baker's Semi-sweet baking chocolate OR 6 squares Bittersweet baking chocolate
4 squares Unsweetened baking chocolate
1 tsp. baking powder
6 Tbsp butter or margarine
2 cups toasted chopped walnuts (optional)
1 1/4 cups sugar
3 eggs
2 tsp. vanilla
1 cup flour
1/4 tsp salt

Heat oven to 325 degrees

1. MICROWAVE: chocolate & butter in a large microwavable bowl on HIGH 1 1/2 - 2 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir until chocolate is completely melted & smooth.

2. STIR: sugar into chocolate until blended. Mix in eggs & vanilla. Stir in flour, baking powder & salt. Stir in nuts. Drop by rounded tablespoons, 1 1/2 inches apart onto ungreased cookie sheet.

3. BAKE: 12 minutes or until set. DO NOT OVERBAKE. Cool 5 minutes, remove from cookie sheet & cool completely on wire racks. Makes @ 3 dozens.

Tricia,

I hope that you feel better soon. You made me smile when I read your post about puffed wheat. I am from a big family too and my Mom used to buy the stuff by the HUGE bag. Had to put your hand over the cereal when you poured the milk in so that it wouldn't all float out of the bowl. And you had to eat it FAST, otherwise a bowl of mush.
Good times.

sewbizgirl 11-12-2014 04:34 PM

The mail lady brought a huge box to the door today... from my Santa!! It's big AND heavy so I can only imagine what's inside. I was so focused on what I was sending I sort of forgot about the receiving end! Yay... lots of fun ahead. I will post a photo after the big opening day.

Thank you my dear 'Santa'... can't wait to see what you sent.

Merry Christmas!

sewbizgirl 11-12-2014 04:35 PM

I would love the biscotti recipe.

PenniF 11-12-2014 04:43 PM

Neesie....come on now.....we need you to share your biscotti recipe....we ARE having a recipe exchange !! And i don't have a "proven" recipe for that.

Cindy....what better could there be.....brownies in cookie form !!

Tricia ---- you are a very brave lady - all this going on and you're POSTING.....and going out to mail a package !!!! Please be taking care of yourself !!!...........i'm TOTALLY with you on the cereal and LIMA BEANS !!!! {{{{shudder}}}

Oh umm yea i use to have SOS as a kid. It was made with chipped dried beef & white gravy. Always on toast. As an Army brat we saw a lot of it as it was fast & super cheap for a family of 5 several times a month...like once a week. And usually severed with canned peas, limabeans or butter beans.... still can't eat them to this day. I can't eat puffed rice or puffed wheat, raisin bran cereals or corn flakes either.

Neesie... you can send me some of that Biscotti my way. I love dipping in my coffee & hot cocoa. I have no allergies to any of the ingredents.

Today I got 6 injections in my lower back today. And man did they hurt!! I have one that still hurts and this is before the medicines are even injected!!! I go back on Friday for the left shoulder and believe you me...he will hear about it if it doeesn't abate.

I go back to see the surgeon tomorrow. I tryed eating some soft buttered noodles and they where getting stuck... and my neck is painfully swollen. Looks like I'm back on the liquid diet again... blak...not a big fan of jello. I also have to use a straw in order not to choke. I'm still sleeping in the recliner...joy of joy! NOT!!! The cats keep trying to sleep on neck & chest...the little buggers!

Anyways I found a package waiting for me when I finally made it home this afternoon. My cats are sure interested in the box. I have caught them chewing on the corners before I stashed in a closet. Mine will going out in the next day to two in between trips to doctor appointments.

Well I'm drained so I got to let Terri know I got mine so I can take another pain pill & land in my recliner.

Tricia

Tricia, would you be able to drink some potato soup? You can get rid of all potato lumps, by putting it into the blender for a minute or two. If you can find some bigger straws, like those used for shakes, you should be able to drink the smoother version, through a straw. Also consider strained baby foods. The mixed veggie combinations aren't too bad, if you add a pinch of salt. You can add any strained baby food to broth, for a nice smooth soup.

I hope you'll be able to find some relief, soon! {{{{{{{ HUGS }}}}}}}

Neesie 11-12-2014 05:01 PM

Yes, yes, I'll share my biscotti recipe! It's actually a tweaked version of a recipe, I found online.

Ours was either made with ground beef, bacon, sausage, or chopped ham. All were yummy! Made B&G with sausage for a crowd last night as a matter of fact using ground turkey sausage, but had to add more Thyme for flavor. Yum Yum.

dharen7 11-12-2014 05:42 PM

Love Love Love SOS My husband and I have it frequently. We use the dried beef, we use hamburger occasionally and sausage. The packages we found to make the gravy takes two minutes and taste great. Used to get the big bags of puff rice. Think I'm showing my age. All the memories of growing up back in the 50's. The other staple rice. Milk sugar and cinnanmon my sister cant eat rice anymore but I still do.

Neesie 11-12-2014 05:46 PM

I've always loved rice . . . with gravy, butter, cheese, plain, whatever! When I was a kid, I'd smash it down and sprinkle salt over it. I'd also mix rice with my mashed potatoes. Yeah, I was a weird kid! :D

ShelleyCS 11-12-2014 06:04 PM

Never had rice as a kid (but love it now) and never had SOS, but lived on hamburger soup. A pound of ground beef, potatoes, usually canned tomatoes, plus anything else available. Carrots? Corn? Pasta? Beans? Leftovers? Yum. Still make it today, but with a little bit of sophistication: maybe some basil or pesto, some parmesan. And always some homemade bread.

My favorite soup is hamburger soup. My grandmother made the best, She always put whatever she could find leftover in the fridge in, the soup.

Here's the biscotti recipe. For the ones I made and sent to my SS, I left out the almonds. Since I wasn't sure about allergies and any other digestive problems, figured they'd be safer that way. The flavor is much the same (thanks to the healthy dose of almond extract), with or without.

Almond Biscotti

1-1/2 cups sugar
1 stick salted butter, softened (real butter, not oleo)
3 whole extra large eggs
1 teaspoon vanilla extract (I use Watkins Madagascar Bourbon Pure Vanilla Extract)
1 teaspoon almond extract (I use McCormick Pure Almond Extract)
1/2 teaspoon salt
1 Tablespoon baking powder (I use Rumford Aluminum Free Baking Powder)
1/2 cup sweetened coconut flakes
1/2 cup toasted slivered almonds, chopped (toast in oven or in skillet)
3 cups flour, unbleached all-purpose

For the top
Cinnamon sugar (I use Watkins Pure Ground Cinnamon) When I make cinnamon sugar, I use a lot of cinnamon, so that the mixture is a sort of light golden brown.

Preheat oven to 350 degrees (F).
Line a cookie sheet with baker's parchment, for baking
Also, have a small floured surface ready, to form the dough after mixing. I use a small baking pan for this.

Mix first 6 ingredients until smooth and well blended. Add the baking powder, coconut, and almonds. Mix until well blended.
Now mix in the flour, about a quarter at a time. By the time you add the last quarter of it, the dough will be getting somewhat stiff. Just mix it, the best you can. If there's a bit of dry flour left in the bottom of the bowl, don't worry about it.

Dump the dough out onto the floured surface and flip over a few times, until any stickiness is coated with flour. Shape the dough into a sort of long oval, then divide that into two pieces.

Take each piece in turn, to the parchment covered cookie sheet. Shape each piece into a long log, almost the length of the cookie sheet. Try to square off the ends, so that it bakes more evenly. I usually try to keep the logs around 2" wide, as they tend to spread quite a bit, as they bake.

After the logs are shaped, take a wet paper towel and lightly pat the tops and sides until you can see that the dough top is wet. Sprinkle on the cinnamon sugar and be generous with it! The more, the merrier!

Bake for 40 minutes, then remove from oven and let cool (still on cookie sheet) for 30-45 minutes. I turn off my oven, while they cool.

After the logs are cool, turn your oven back on, to 325 degrees (F).

Take each log and very carefully cut into slices. I find it works best to use a sharp serrated knife and slice (several times) in one direction only. If you 'saw' at them, the slices tend to break. Cut the slices around 1/2" to 3/4" thick. As you slice them, return them to the cookie sheet. I just stand the slices back up as if they were still connected, but make sure there's a bit of space between each. Any extra pieces can go between the two reconstructed logs.

I usually keep the end pieces out, for sampling. The ends tend to dry out a lot faster, so don't really need the second baking.

Okay. Now you've got all the little slices standing next to each other, like little soldiers. Make sure there's just a tad of space between each. This is important, so that the insides will dry.

Return the pan to the oven and bake for about 15 minutes. DO NOT OPEN OVEN! After 15 minutes, turn off the oven and leave the biscotti inside, with the door closed. If it's late in the evening, leave them in the oven overnight. Basically, you want to leave them in there, until the oven cools.

If you're in a big hurry and need to use the oven for something else, do the second baking for about 20-25 minutes, then remove the biscotti and spread them out on cooling racks, with a few paper towels beneath the racks. They must be completely cool, before putting into containers.

I use quart sized freezer bags, to store them. Just place a 'row' of however many will fit into the bag. Since they're dry, they keep longer than regular cookies. We've kept them up to a couple of months (during cooler months), with no change in the taste. You can freeze them, if you need to store keep them for longer than that.
