I am 5'7" and use my ironing board with a "Big Board". As the ironing board is adjustable, it suits what I feel like when I use my cutting mat.

I have different heights counter tops and table to use. All depends on my back that day. My workbench top is in 3 pieces so I have to compensate for that. My kitchen countertop is the perfect height but I have to move the coffee maker, toaster and knife and utensil buckets. takes all of 2 minutes but it is what it is.

I've read that the best height for a cutting table is no higher or lower than 3" than your elbows.

I like it a kitchen counter height. Even made blocks to raise my ironing board the same, and when we remodeled the bathroom, I used a kitchen cabinet at the sink instead of the standard bathroom vanity. Has made a BIG difference on my back.

When we did our bathroom over - I insisted on a higher vanity - DH kicked and screamed every inch of the way -

We bought a small RV in Florida, and the vanity was "standard" low height - he raised it several inches!

Maybe start with your kitchen counters as a benchmark for a comfortable height and adjust that height for you.

I agree that "regular" table height is much too low for cutting for a very long time.

Interestingly enough - I can sit on the couch and use the coffee table for "trimming" for quite a while before I get miserable.

Kitchen cabinets with countertops are typically 36" tall. Does you kichen height feel good when cutting?
Most important thing for me is not to be leaning forwards. My cutting area is close to 38".

Bed risers are great and a wonderful permanent solution to table height. A quick inexpensive solution if you are using a folding table: purchase 2" PVC pipe and cut it to 12" lengths. The wonderful Home Depot employee cut a 12 foot length of pipe into 12 pieces for me. Now we can quickly raise 3 tables at retreats. Much less expensive than bed risers and easily transported.

We have also used the pipes any time we do assembly line projects like a take out only fund raiser meal. Two hours of filling plates bending over the church's tables killed my back! Guess what they asked to use at the next take out only meal? We also help wrap presents at Christmas for charity groups, and stuff stockings...the list goes on....

Ziegamomma, what a great idea!
The bed risers arrived and are in place. The table is now 34.5" tall and so much easier to use! The table is a little wobbly, but it doesn't affect my cutting.
One day I would like to build a permanent table.... I just need to get rid of my clothes rack also known as a treadmill.
