When you go to put the large blocks together do them the same way, it takes a bit more planning on your part but they look so neat. One other thing you can do also is change the center block square sizes. Like use the correct size in the first set and then when you join the rows, use smaller center square there.

Maybe your church or recreation center would let you use a room and a few card tables to spread out the quilt to be able to stand at the sandwiching task. That pattern looks like the inverse of a drunkard's path block.
