Wow you have to feel a huge sense of accomplishment upon finishing this ambitious project. Like suggested I would do
simple quilting: either serpentine or straight so as it doesn't overwhelm your complicated design. Congratulations on a great finish.

I would most likely do straight line quilting too. This is an interesting work of art. I love the sea shell. I can't wait to see it finished all the detail is so pretty.

    Very interesting concept!
As for quilting, there are a lot of free tutorials on alternate methods to quilt on your domestic, This author has an awesome book with very easy to understand ideas..... she's not the only one, but definitely a great one...

What a fantastic job! And congratulations for not giving up - I know the feeling only too well!

I think some wavy lines following the piecing would look good.

I never considered using a cross-stitch pattern as the source for a quilt idea. When I saw your heading, I thought it would be a bunch of cross-stitched pictures set into a quilt. This is so incredibly creative and the final product is beautiful. Thanks so much for sharing - I have a bag of cross-stitch patterns tucked away somewhere that might be resurrected one day when I'm looking for an epic project!

Ingenious to use a cross-stitch pattern!

For the missing background, you could consider putting a simple design in that corner and maybe also in the opposite. I'm thinking something like this, maybe in colors from your shell, or lighter versions of those colors:
