Beautiful, I'm looking forward to seeing how it turns out after all the ideas above on finishing - my vote is to keep the scalloped edges if you can. I don't really know how to explain what they call "The Birthing Method" of finishing a quilt, but maybe that would be the way to go...

Don, Your quilt is drop dead gorgeous!! Love that tan background with your fabrics.
The picture in this link from thimblebug is what I would suggest, Cut borders from your tan fabric wide enough to be able to applique your quilt edges to them and still have an inch or two outside of the wedding ring curve. Then you could add your border to that with your stacked pieces. That way you get the best of both...you keep your beautiful WR curves and get to add the border you want which I think will make a stunning addition to the quilt. Whatever you do, post another picture when you're finished. BTW, yours is the first wedding ring quilt I've ever seen that has been pretty enough for me to be inspired to make one myself. You're awesome!
