Once you have your octagon, you just sew strips around it. Some people do every other side first then fill in the empty sides, some start with the first side, only sewing it halfway (leave unsewn towards the side where your last strip will be sewn), sew all the strips, when you get to the last strip, sew it down, then finish sewing the first strip. You can build out the octagon however you like, either with strips all the same width, or vary the widths for each strip set added. Because the octagon is essentially a blank canvas, you can piece it, embroider it, FMQ it, applique it....if you search the board for Octagonal table toppers there are lots of pictures.
