I like the sashing of pink. The minkie blocks seem to be too big not to have some quilting in them , if nothing more than an X through the middle to anchor them. Remember if you use flannel on the back to wet and dry at least twice, to allow for shrinkage. It is very cute, just love it.

I think you have to put a stabilizer on the minky to quilt it on a longarm, which sort of defeats the purpose of putting it in the quilt but if you don't actually want quilting on those blocks, it might be do-able. Ask your long arm quilter if she would be willing to tackle it. As to the pink, I think it looks better with the sashing.

I like the sashing around the blocks.
As far as the minkee, my old LQS would use it as backing. In fact, I believe they would offer it as backing for the kids camp projects. It just had to be loaded differently than cotton because it stretches differently.
