Make a quilt for a nursing home, a children's home or a charity raffle with part of the fabric and donate it in his name. Give him a picture of it with a plate of cookies.

There's a certain graciousness in simply saying "thank you". He said he doesn't want anything, and what material item can possibly equal the happiness he has given you?
If you must, watch for one day, when you can surprise him with something. Not necessary with a dollar value attached.

    What a wonderful jackpot!

He was very sweet to think of you.

I agree that sometimes less is more. A simple thank you note will suffice. If you really feel you need to do something, make him a homemade meal; lasagna, meatballs, chili, chicken and dumplings, and add the extras: salad, veggies, iced tea, etc. and of course a nice home made dessert. Deliver it in a basket. Nice way to say thank you for thinking of me.
