You are doing a fine job with this quilt. If it were mine, I would be inclined to do as you said, a gridwork of straight line quilting with some FMQ on the chain blocks. the quilt is already quite busy, so I'd leave fancy work mainly for the borders.

Maybe a baptist fan, something traditional, if you want to challenge yourself further, and dependng how your borders finish, maybe some feathers. You could also quilt each block individually.
Also, stitch in the ditch (SID) or a grid would be nice also, if that's what you're comfortable doing.
Quilting is supposed to be fun....and a little challenging IMHO. So do what is comfy for you.

I have to agree with the baptist fans if you want an all over type of a design. Those always look great on a sampler like this...and it's very traditional.
I of course also like custom quilting. It all depends on what you are going to use it for. Display, charity..ect.
Again..beautiful.
