    Whenever I need a quilt bigger I just use borders, could be 1, 2, or 3. It's an easy solution.

    DO PINWHEEL BORDERS. have the plates as a medallion in the middle. What you have now is just beautiful.

    You could add white border and do applique in it. Something like vines, flowers and leaves.

    So pretty. It reminds me so much of the quilts my darling little grandmother used to make. She had bags and bags and bags from chicken feed, plus dresses and shirts from the whole family, and she always came up with visually pleasing designs.

    Your quilt is lovely. IMHO if you add too many and too wide a border/s, it will take away from the quilt design itself. You want the eye to be drawn to the plates and not the border. I would buy more fabric and keep making plate blocks until mom is satisfied or, just tell her this one is finished and when you get more fabric for a bed quilt, you will make it for her. She's your mom, she'll understand.

    I agree, don't just put on a lot of borders. It is beautiful the way it is.
