hmmm, i like #1 myself. and the 3" squares look good in multi colors too.

In the first picture, the 3" squares are the same color as the 2" squares and if you're looking for symmetry, that's the one you should go with. Again, it's going to be a beautiful quilt no matter how you do it. :D
