What a very cute Sunbonnet Sue quilt!
I would echo stitch one time or SID around all of the Sunbonnet Sues, and then tie in each of the sashing squares with a surgeon's knot.
For the brother I would make a Sunbonnet or Overall Sam in blues.
If they're anything like my daughter and son it helps to always have two of the same or similar anything for each of them.

I would quilt around the shapes for the Sunbonnet Sue.As for the little boy's quilt, there is a boy that goes with the Sunbonnet Sue pattern if you like to stick with the theme. He is just like Sunbonnet Sue with boys' clothes and hats.

Here's the Sunbonnet Sue I made for my 4-year-old granddaughter a few years ago. I outline stitched the Sues, then stitched diagonal lines in the blocks up to the outline stitches and free-handed flowers in the sashing and borders.

Tying quilts certainly have their place but several that I have given away ended up getting beat up in the washer & dryer. I now have to go back and "fix" them because I expected recipients to know how to care for them. At least stitch in the ditch and then tie some if you want and remember somewhere down the road, they might be mishandled. Also, little girls like Sunbonnets but boys like frogs or fire trucks. If you make a quilt for one, I think the law says you must make a quilt for the other one.
