Your quilt is really beautiful! I would use your background fabric for the border and binding. It is lovely just the way it.

Wow, that is really gorgeous. That would look lovely hanging over my stairway. I think the simple off-white border and binding will work. I would add a little pizzazz and add a one-inch off-white border then piece a narrow, say 1/2-inch, border using scraps from the squares, than another 1-1/2 inch off-white border then bind with off-white.
