    I like the first one for sashing if you decide to sash. I think it shows off the fabrics more to have sashing so that all the squares don't run into each other.

    I love #2 best. I think it gives it more of a "country" look. Can't wait to see the finished project.

    I like the look of an overall scrappy quilt so I would not use sashing. I would definately do borders, I like the second one but the third one may make is brighter.

    I love the scrappy look! My favorite of the 3 background fabrics is the first one because of the contrast it offers...which helps define the colors of the small blocks. But I'm intrigued by another color that I see in the blocks. There's a reddish/rust burgundy kind of color that I think is really nice. If this is a possibility for you...it could be another good color to consider as part of your border. I think it could really make the colors pop! Happy quilting!
