Afternoon Tea Ideas ?

I did afternoon tea for a baby shower several years ago.
the crustless mini-quiche was a big hit. I mixed up an egg mixture with a bit of milk or cream and spices. S&P a touch of nutmeg is great. Saute some mushroms if you like them with a little finly chopped onion. put a little with a heaping teaspoon of shreaded cheese in the bottom of a nonstick and sprayed mini muffin pan. pour egg mixture about 2/3 full. bake until puffy and lightly brown about 10 minutes @375. 3 eggs & 1/2 c milk/ cream makes about 2 doz.
You can also use :chopped ham and swiss
: sauted spring onion with crabmeat
: bacon and cheddar
: sauted chopped broccoli crowns and your favorite cheese....
For a sweet I served Itallian wedding cookies and fruit salad AND of course pots of a good earl grey with milk and sugar/ sweetner. I also had lemon slices for those who wanted it.
