    I'm really lazy when it comes to baking. I use a mix and I add really ripe bananas and walnuts to it.

    Here is one my family loves. 3 cups all purpose flour- 3/4 tsp. salt-1 tsp soda-2 cups sugar-1 tsp ground cinnamon- 1 cup chopped nuts-3 eggs beaten- 1 cup veg. oil-2 cups mashed bananas- 1 8oz. can crushed pineapple drained- 2 tsps vanilla extract. Combine first 5 ingredients; stir in nuts. Combine remaining ingredients add to flour mixture, stirring just until dry ingredients are moistened. Pour into 2 greased and floured loaf pans and bake at 359 for 1 hour and 10 minutes. Cool in pan 10 minutes then turn out on rack to finish cooling. This comes from a Southern Living cookbook.

    I found this on youtube and is the very best recipe ever. My Banana Bread was always a total disaster until I started making this one. I am sure you too will enjoy this recipe.

    Banana Cream Cheese Bread with Maple Glaze:

    3 C. flour
    2 t. Apple Pie Spice
    3/4 t. Baking Powder
    1/2 t. salt
    1/4 t. baking soda
    3/4 C. softened butter
    1 - 8oz. pkg. cream cheese softened
    1 3/4 C. packed brown sugar
    2 lg. eggs
    2 c. mashed bananas
    1 t. vanilla
    Glaze:
    3 T. Maple syrup
    1 T. heavy whipping cream
    1/2 t. vanilla
    3/4 c. powdered sugar
    Preheat oven to 350, Spray 5 mini loaf pans with Pam
    In med. bowl, whisk flour, spices,baking powder, salt and baking soda.
    In large bowl beat softened cream cheese and butter till combined. Add brown sugar, beating till fluffy. Add eggs, one at a time, beating well after each one. Stir in mashed bananas and vanilla. Stir in flour mixture till combined. DO NOT over mix. Divide batter between pans. Bake 35 -40 min. till tooth pick comes out clean. Allow to cool in pans a few min. before removing onto wire racks to cool.
    While Bread is baking prepare glaze..... Whisk the Maple Syrup, Cream and vanilla, then whisk in the powdered sugar, till smooth. Drizzle over cooled loaves. Enjoy!

    The recipe on the bag of White Lily All-purpose flour is about the best one I have used, and it's pretty easy to do.

    In order to get my kids to eat Banana bread, I added chips - didn't matter if it was chocolate chips, peanut butter chips, white chocolate chips or butterscotch chips.

    My mom's is the best
    Banana Bread

    1/4 c shortening 1/4 tsp salt
    3/4 c sugar 1/2 tsp baking powder
    1 egg 1/2 tsp soda
    2/3 c mashed bananas 3 tbsp sour milk
    2 c flour 1/2 c nuts

    Cream shortening and sugar. Sift dry ingredients. Add rest of ingredients. Pour into loaf pans. Bake at 350 F for 45 min. (this time is for 2 small loaf pans. For one large loaf pan, use 55-65 minutes)
