    Default Avocado a day

    Ever since Brian Williams reported that eating an avocado a day can lower your cholesteral, I have been looking for ways to include it in my diet beyond sandwiches and salads. On GMA today they were talking about Avocado Pudding. I had to try it and whipped together my own recipe but there are lots of versions if you google. I didn't want to use my processor so I smashed one avocado smooth with a fork, added a little less than 1/4 cup cocoa and used 1/4 cup corn syrup as my sweetener. Some recipes called for brown sugar and milk but mine was smooth enough with the corn syrup.
    It will be my lunch today as it is supposed to replace a meal because of the calories. Give it a try and it is pretty tasty.

    I absolutely love avocados. This sounds quite interesting I must add. Who would ever think? thx 4 sharing.

    ​Next time I am going to cut my cocoa to 1/8 cup so I can reduce my sweetener also. I am also wondering if I could use it to ice my brownies. Oh the possibilities are intriguing!

    I love avocados! I grew up with a mature, abundantly-producing avocado tree in our yard and I have missed that tree for years! I eat them with nothing but a spoon and a little seasoning. Just cut it in half, remove the pit, shake on some seasoning and eat it just as-is. Delicious!

    I also make avocado sandwiches that is nothing but bread with a little mayo and slices of avocado inside. Also very yummy.

    I love the flavor of avocados, so I don't like to hide it with much. Even guacamole "hides" too much of the flavor sometimes. They are high in fat, but it's the 'good' kind of fat.

    I love avocado's too!! By themselves or in a salad. I would have no problem eating one a day!!!

    I love avocados, but I have to mortgage my house to buy them--the prices are crazy!

    Me too. Our little grocery store a few blocks away had avocados on sale for $.89 each. I bought five on Monday and then I bought five again yesterday. Hey, I don't know when I'll get them again and I am going to eat them until I turn green!!!!

    My favorite is either canned sliced peaches, pears or a can of Mandarin oranges and one whole chopped up avocado on top with a nice sprinkle of Catalina Classic dressing. Or chopped up on a taco salad. Our big grocery store had them for $1.29 each yesterday. Whoo-hoo!!!!! I know where I can find them forty cents cheaper. The sale ends today!!!!!!!
